High Protein Foxtail Millet Salad with Feta Cheese

Ingredients:
- 1 cup Millé Foxtail Millet, cooked according to package instructions and cooled
- 1 cup microgreens
- 1 cup cherry tomatoes, halved
- 1 red capsicum, diced
- 1 yellow capsicum, diced
- 1 cup corn, cooked and cooled
- 1/2 cup feta cheese, crumbled

For the dressing:
- Juice of 1 lime
- Freshly ground black pepper, to taste
- 1/4 cup extra virgin olive oil
- 2 cloves garlic, minced
- 2 tablespoons fresh herbs chopped
- 1/4 cup homemade vegetable stock or water

Instructions:

1. In a pan, sauté the microgreens, cherry tomatoes, diced red and yellow capsicum, corn for 10 mins or until soft.

2. In a large mixing bowl, combine the cooked foxtail millet, sautéd veggies and crumbled feta cheese.

3. In a small bowl, whisk together the lime juice, black pepper, extra virgin olive oil, minced garlic, fresh herbs, and vegetable stock or water to make the dressing.

4. Pour the dressing over the salad ingredients in the large mixing bowl. Gently toss everything together until well combined and evenly coated with the dressing.
