Decadent Double Chocolate Cake with Frosting

This fudgy, moist and vegan friendly cake is every chocolate lovers dream. A mouth-watering treat to enjoy with your morning coffee or the perfect after dinner indulgence!

Ingredients

For the Frosting

  • 1 cup sugar free powdered sugar
  • 1/2 cup granulated sweetener
  • 1 cup cocoa powder
  • 2tsp vanilla extract
  • 1/2 cup unsweetened almond milk.

 

Method

  • Preheat the oven to 180 ° C (350 ° F). Grease a 7 x7 inch square pan or line it with baking paper.
  • In a bowl, add the wet ingredients (water, butter/oil, yoghurt/egg) and whisk. Add the dry ingredients (cake mix and raw unrefined sugar as per your choice) and mix till the batter is smooth.
  • Pour the batter into the pan and bake for 25-30 minutes.
  • Insert a fork or toothpick into the cake once it’s cooked. If it comes out clean, the cake is done. Allow it to cool before removing it from the pan

For the Frosting

  • Combine your dry ingredients and mix well. Add the vanilla extract and milk and whisk together, until smooth and glossy. For a thicker frosting, add more powdered sugar. For a thinner one, add more milk.

For the Assembly:

  • Once the cake is cooled, cut through the centre to make two parts
  • Pipe and spread the frosting. Add the second layer on top and repeat.
  • Add fresh blueberries and almond shavings.
Cake is ready to serve.
