Vanilla Madagascar Cake

Tis’ the season to eat cake and not feel guilty! Here’s a happy, wholesome indulgence to match your holiday joy and cheer. Better yet, involve your loved ones (child, friend, partner) and make this a fun holiday activity 🥰

 

Ingredients

🍰 For Vanilla Cake

  • 1 box Mille Vanilla Cake Mix
  • 180 ml hot water
  • 60 ml melted butter or oil
  • 2 eggs or 120 ml thick/vegan yoghurt

 

🍰 For Jaggery Frosting

  • 1/2 cup unsalted butter at room temperature
  • 6 tbsp powdered jaggery (try the Slurrp Farm one!)
  • 2 tbsp water
  • 1/4 tsp cardamom powder
  • 1 tsp vanilla essence or extract

 

How to Make Cake

  1. Preheat the oven to 180°C (350°F). Grease a 7x7 inch square pan or line it with baking paper.
  2. In a bowl, add the wet ingredients (water, butter/oil, yoghurt/egg) and whisk.
  3. Add the dry ingredients (cake mix and raw unrefined sugar as per your choice) and mix till the batter is smooth.
  4. Pour the batter into the pan and bake for 25-30 minutes.
  5. Insert a fork or toothpick into the cake once it’s cooked. If it comes out clean, the cake is done. Allow it to cool before removing it from the pan

 

How to Make Frosting

  1. Beat the butter until smooth.
  2. Add half the jaggery (3 tbsp) and half the water (1 tbsp) and beat well until smooth. Add the remaining jaggery and water and beat well until smooth. Beat until desired consistency is achieved (light and fluffy).
  3. Beat in the cardamom and vanilla essence or extract.
  4. Spread the frosting on the cool cake using a spatula.

 

Note

  • For a smooth frosting, make sure the jaggery is finely powdered. Slurrp Farm Jaggery Powder is ideal for this.
  • Vanilla and cardamom are optional in both cake and frosting.
