Strawberry Yoghurt Parfait

This is one of our favourite breakfasts. Like what’s not to love? The delectable combination of fruit, yoghurt, and cereal flakes can really make your mornings sing. Skip the unhealthy breakfast flakes and choose Mille’s Vanilla Buckwheat Millet Flakes. 


  • 1 cup Mille Vanilla Buckwheat Millet Flakes
  • 1 box fresh strawberries
  • 1 box fresh homemade yoghurt
  • 2 tbsp lemon juice
  • Nuts and seeds as per choice
  • Fresh edible flower (optional for topping)

How to make strawberry compote 

1) In a saucepan, add chopped strawberries and sugar; cook on medium heat stirring often until slightly softened.

2) Once strawberries start to release water, press down with the ladle, crushing the berries into a thick paste, stirring occasionally.

3) After a few minutes, when the berries have thickened a bit, add lemon juice and remove from heat. Cool completely. 

4) At this stage, it can be refrigerated until ready to be mixed with fresh yoghurt. You may have to whisk the yoghurt to make it creamy and flowing.

How to assemble the parfait

1) In large parfait individual glasses (or any dessert glass you have), start layering the elements of the snack or dessert parfait.

2) Start with a layer of yoghurt and strawberry compote. Spread it out at the bottom of the container.

3) Top it up with some Vanilla Mille flakes.

4) Sprinkle some nuts, seeds, aam papad, or fresh edible flowers.
