- 1/2 cup (50g) Millé Pasta
- 5-6 ripe sweet tomatoes
- 2 cloves of garlic
- 1 onion finely chopped
- 1 tsp chilli flakes, 1 tsp oregano, ½ tsp black pepper, Italian herbs and salt as per taste
- 2 tbsp olive oil
- For Garnish
- 4-5 Basil leaves
- Parmesan Cheese
Millé Pasta Preparation
- In a pan, boil ½ cup of water with a tsp of salt. Once water comes to boil, add Millé pasta and cook for 6-7 minutes on high flame and stir occasionally.
- 2. Drain the pasta and rinse in cold water. Keep aside.
Red Sauce Preparation
- Boil tomatoes in a vessel for 5mins. Make sure you don’t overcook the tomatoes. Peel the skin.
- Blend the tomatoes to make puree.
- In a separate pan, saute the garlic and onions in olive oil. Add chilli flakes, black pepper, oregano and your preferred Italian herbs and salt to taste. Saute well.
- Pour the tomato puree and add tomato sauce. Cook for 2 minutes, or until the sauce is cooked.
- Remove from flame. Fold in the boiled pasta and mix well.
- Garnish with parmesan cheese and basil leaves. Serve hot.
Note:
- Do not overcook pasta as it turns mushy while serving.
- Adjust the spice to your choice.
- Use tomatoes that are ripe and juicy.
