Berry Chocolate Pancake Crepes

Ingredients:

  • 1 cup Mille’s chocolate pancake mix
  • 1 ¼  cups milk (dairy or plant-based)
  • 2 tablespoons olive oil
  • 2 tablespoons honey 
  • 1 teaspoon vanilla extract
  • Topping with your favourite berries

Instructions:

  1. In a mixing bowl, combine the Mille’s chocolate pancake mix, milk, olive oil, honey, and vanilla extract.
  2. Whisk until the batter is smooth and free of lumps and let the batter rest for about 10 minutes to allow any bubbles to settle.
  3. Heat a non-stick pan over medium heat. Lightly grease with a small amount of olive oil.
  4. Pour about 1/4 cup of batter into the pan, tilting the pan in a circular motion to spread the batter evenly.
  5. Cook for 1-2 minutes until the edges start to lift and the bottom is lightly browned. Flip the crepe and cook for another 1 minute until cooked through.
  6. Repeat with the remaining batter, greasing the pan as needed.
